rice and peas without coconut milk


 rice and peas can be made however you wish depends on your taste and dietary needs. classical or traditional Jamaican rice and peas is made with coconut milk but this can be excluded if necessary. ingredients: 2 regular size cups of basmatti rice washed 3 1/2 regular size cups water or liquid from cooking beans if used dried beans i tin kidney beans 2 cloves garlic 2 sprig thyme fresh/ dried i whole scotch bonnet pepper 1 teaspoon all purpose seasoning 1 teaspoon butter or 1 tabletspoon olive oil 1/4 teaspoon brown sugar 1 teas spoon salt or more if needed 1/4 teaspoon black pepper freshly grounded i teaspoon parsley if available 3 sprigs spring onion method: wash and add rice to liquid,on the hob /cooker medium heat add beans add washed thyme spring onions,garlic whole seasonings sugar and scotch bonnet oil or butter simmer on medium heat for about 8-10 mins ad then lower heat and cover until cooked /steamed fluffy for another 10 mins. note this can be achieved by using a rice cooker too serves 4-5 people serve with salad and any meat of your choice.
